I have made this recipe about 5 times in the last 2 weeks! The first 4 times I made the soup I used leftover roasted chicken and add it at the very end, after the cheese so that the already cooked chicken would not disintegrate while cooking the broccoli. That worked well.
The recipe as listed used uncooked chicken breast cut into small cubes. This works great as well if you don’t have leftover chicken in the fridge.
Feel free to double the broccoli and the chicken, just adjust the seasoning at the end.
If you want a white chowder, simply use a sharp white cheddar cheese.
NOTE: I have made this recipe using 8 ounces, 12 ounces and finally today using a full pound of cheese. You have more of a chowder consistent when using the full pound of cheese but feel free to use less. I just love cheese! ♥️♥️♥️
From start to finish, under 15 minutes which includes prep time and the amount of time it takes to come to pressure.
Feel free to add different veggies as well but as the recipe is written, it is simply delicious and thick and rich like a yummy chowder.

4 cups bone broth or chicken stock
16 oz. frozen broccolli
1 tablespoon Cajun Seasoning or seasoning of choice
1 lb. chicken breast, cut into 1 inch cubes**
8 oz. cream cheese
12 to 16 oz. shredded sharp cheddar cheese
Extra Cajun seasoning and black pepper to taste
Instant Pot Directions:
Pre-heat Instant pot by using "Saute" mode and add chicken broth to metal insert Then, add chicken, broccoli, and Cajun Seasoning. Top with lid and make sure vent is closed. Turn off IP and then press "Manual" (high preassure) for 3 minutes.
Once time is up, open valve to release steam then remove lid.
Stir in cream cheese (in small chunks) until melted, leaving small pieces if desired. Then cheddar cheese, stirring until melted. Taste for seasoning and add more Cajun seasoning and black pepper to taste.
Enjoy.
** You can also use leftover cooked/rotisserie chicken. If chicken is already cooked, add at the very end, after cheese has been added so that chicken does not break down during the cooking process.
- Add all ingredients except cheeses to large pot. Cover with lid and cook on medium heat until broccoli is tender and chicken is cooked, about 10 minutes. Turn heat to low and stir in cream cheese and cheddar. Taste for seasoning and add more Cajun seasoning and black pepper to taste.
