Bring this Bacon-Balsamic BBQ Sauce to your Memorial Day gathering and everyone will be impressed! A little sweet, a little smokey, a little heat and oh, BACON! 🙂 Make extras because you are going to need it! Most BBQ sauces are filled with high fructose corn syrup and artificial ingredients! 😛 Not this recipe! - 8 oz. bacon, chopped into small pieces
- 1 small onion, finely diced
- 3 cups (24 oz.) crushed tomatoes
- 2 tbsp. garlic powder (or 2 tbsp. crushed garlic)
- 2 tbsp. whole grain mustard
- 2 tbsp. gluten-free Worcestershire (or fish sauce)
- 1 tbsp. tomato paste
- 1 tbsp. liquid smoke
- 3 tbsp. balsamic vinegar
- 1/2 tsp. cayenne pepper
- 2-1/2 tsp. smoked paprika
- 1/2 tsp. Organic Trader Joe's Stevia or sweetener of choice, to taste
- 1-1/2 tbsp. raw honey (optional)
In a large pot over medium heat, add bacon. Cook bacon until fat is rendered and bacon is crisp. Remove bacon pieces and set aside. Add onion to the bacon grease. Cook onions on medium heat for 8-10 minutes or until tender (be sure not to burn). Reduce heat to low and carefully add the remaining ingredients (including the reserved bacon). Stir well and allow to cook for 5-10 minutes. Taste for sweetness and heat and adjust if needed.
Pour into 2 pint jars (or 1 quart jar) and refrigerate for up to 4 weeks.
Makes 1 quart
Nutrition per 2 tbsps: 50 Calories, 3 grams Fat, 3 grams Total Carbs, 1 gram Fiber, 2 grams Net Carbs, 3 grams Protein (including honey)
