Bacon-Balsamic BBQ Sauce

Ingredients
    • 8 oz. bacon, chopped into small pieces 
    • 1 small onion, finely diced
    • 3 cups (24 oz.) crushed tomatoes
    • 2 tbsp. garlic powder (or 2 tbsp. crushed garlic)
    • 2 tbsp. whole grain mustard
    • 2 tbsp. gluten-free Worcestershire (or fish sauce)
    • 1 tbsp. tomato paste 
    • 1 tbsp. liquid smoke
    • 3 tbsp. balsamic vinegar 
    • 1/2 tsp. cayenne pepper 
    • 2-1/2 tsp. smoked paprika 
    • 1/2 tsp. Organic Trader Joe's Stevia or sweetener of choice, to taste 
    • 1-1/2 tbsp. raw honey (optional)
Instructions
  1. In a large pot over medium heat, add bacon. Cook bacon until fat is rendered and bacon is crisp. Remove bacon pieces and set aside. Add onion to the bacon grease. Cook onions on medium heat for 8-10 minutes or until tender (be sure not to burn).  Reduce heat to low and carefully add the remaining ingredients (including the reserved bacon). Stir well and allow to cook for 5-10 minutes. Taste for sweetness and heat and adjust if needed.

    Pour into 2 pint jars (or 1 quart jar) and refrigerate for up to 4 weeks.

  1. Makes 1 quart

    Nutrition per 2 tbsps: 50 Calories, 3 grams Fat, 3 grams Total Carbs, 1 gram Fiber, 2 grams Net Carbs, 3 grams Protein (including honey)

    I’m not a “mustard” person, but I have yellow, brown & Dijon on hand…would any of these give similar flavor as the ground mustard seed…or should I wait and buy some? I really want to make this! Thanks πŸ˜‰

    An update on my review: when I made this delicious BBQ sauce, it yielded more than I could use up in 4 weeks time. So I divided it into 3 containers and put 2 of them in the freezer. When thawed, it tasted great! So if anyone is curious, this amazing BBQ sauce does freeze very well!

    Your sauce sounds great. Do you think this could be canned? I think this would be a great gift for a guy that loves to BBQ.

      Cindy, I don’t see why not. To be honest, it last a while refrigerated so I definitely think canning it would be great. Keep me posted if you try!
