Simply delicious! This would make the perfect dessert for any holiday or special occasion. This is better than ANY strawberry shortcake you have ever had, PROMISE!
You can make everything the day before. If you make the gelato in advance, let it thaw for 1 hour before serving to get the right consistency.
For the cake: Prepare my Best Grain-Free & Low-Carb Birthday Cake recipe to make dessert cups using this dessert shell pan. You can also make cupcakes and split them in half. Makes 12-13 cupcakes or dessert cups. Bake at 350 degrees F for 18-20 minutes or until toothpick inserted in the center comes out clean.
For the ice cream: Prepare my REAL Vanilla Bean Gelato recipe. Be sure to place gelato in freezer for 2-3 hours to harden but not much longer or it will be to hard to scoop.
For the strawberries and sauce: Blend 1 pint of strawberries and sweeten to taste with your sweetener of choice. Stir in 1 pint of sliced strawberries to the sauce.
For Dairy-Free:
Use the dairy-free version of the cake recipes (it’s delicious!) and use whipped coconut milk instead of the ice cream or your favorite dairy-free ice cream.
For Nut-Free:
Use ground raw sunflower seeds in the place of almond flour in the cake.
Other Variations:
Consider using blueberries, raspberries or cherries instead of strawberries. You can also omit the ice cream and use whipped heavy cream.
