Blueberry Power Shake

IMG_1684One of my favorite fruits is blueberries!  I hope you enjoy this yummy and healthy shake!  This is one of the ways that I get my daily dose of gelatin and coconut oil in my diet!  My 2-year-old son LOVES this shake, and I feel good that he is drinking something so healthy!

About the recipe:

  1. I use homemade coconut milk.  If you choose to use canned coconut milk, use THIS kind and dilute the canned coconut milk, half milk and  half water.
  2. You can use fresh or frozen blueberries.  If you use frozen blueberries, you can omit the ice cubes.
  3. Be sure to use a high quality protein powder like Great Lakes Gelatin.  Either the red, orange or green can will work in this shake. I prefer the green so there is less chance for clumps.

Blueberry Power Shake

1 cup milk (I used homemade coconut milk)
1/2 cup blueberries or strawberries (fresh or frozen)
3 servings KAL® Pure Stevia or sweetener of choice (to taste)
1/2 tsp pure vanilla extract
1 tbsp Virgin Coconut Oil (optional but recommended)
1 tbsp Great Lakes Gelatin (optional but recommended)
5 ice cubes (if using fresh fruit)

1/4 cup plain 2% (NOT FAT FREE) Greek yogurt (optional)

Directions

Place all ingredients in blender or Magic Bullet.  Blend until you can’t hear the ice or frozen fruit any more.  Taste and adjust sweetness if needed. Enjoy!
