My Favorite Blueberry Recipes

I am on my last few pints of blueberries for the season and this makes me VERY SAD! I have been spoiled for the past few years to be able to pick fresh blueberries from my MIL’s bushes!  Nothing’s better than eating them right off the bush! (No, pesticides are used so don’t worry!)

Melissa is the mother of 2 beautiful boys and the creator of the Satisfying Eats Blog. She has also authored two cookbooks, Satisfying Eats and Comforting Eats, out of her love for Southern food but with a grain-free twist.

    Hello, I just bought your book and it looks wonderful, but I notice that you use sour cream and cream in many recipes. The recipes sound delicious, but I am concerned about the ingredient called Carrageenan that I see is added among other not so good for you ingredients. Here is a paragraph from empoweredsustenace.com where I first heard of this ingredient. Please tell me what you think. I am still learning about eating healthy and would respect your comments. Thanks very much, Jackie

    Carrageenan
    This seaweed-based additive is extremely inflammatory and should be fastidiously avoided.
    As a matter of fact, carrageenan is so caustic to the digestive tract that researchers use it to induce colitis in lab animals! The World Health Organization classifies one type of carrageenan as a “possible human carcinogen” (1). Lesson? Just because a carton of Almond Milk claims the titles “organic” and “heart healthy” does not mean it should be a part of your diet

      Hi Jackie, glad you are enjoying the recipes. I am very familure with carrageenan and it’s a shame it is in so many dairy products and foods. Check out this blog post where I talk more about it: http://bit.ly/12Esle9 I also provide a like that list the brands that do and don’t add carrageenan to their products: http://bit.ly/1fadAFL In the post, I mention how sensative I am to it as well. I purchase cream from our local farmer’s market and I use Daisy Sour Cream that only contains cream. It can cause tummy distress and is a good thing to avoid, especially if you have any tummy issues! I hope this helps!
