Happy Fourth of July….Dessert Pizza

This recipe will not disappoint!  Once again I am pulling out another “treasure” from the Satisfying Eats Cookbook!  This “Sugar” Cookie recipe is delicious and turning it into a crust was so easy!

Feel free to use any fruit you would like or arrange the berries in any pattern. I thought the flag pattern would be fun for Fourth of July!  I will be posting a Dairy Free version in a few days using the Chocolate Truffle Recipe as the “sauce,” stay tuned! 😉

NOTE: I used Stevia to achieve most of the sweetness. I finished the recipe off with coconut sugar for extra sweetness. I have used raw honey in the past but using the granular coconut sugar helps make the cookie a little drier (which you want).  Feel free to use your sweetener of choice.

 (1) 10" Dessert Pizza with 1 cup blueberries and 1 cup strawberries. Serves 12

18 grams Fat, 6.5 Net Carbs, 5 grams Protein per Serving

Ingredients
  1. “Sugar” Cookie Crust

    • 1-3/4 cup almond flour (I use Honeyville)
    • 2 tbsp coconut flour
    • 1 tbsp baking powder
    • 1/4 tsp organic Kal Stevia OR 1/2 tsp. Organic Trader Joe's Stevia or sweetener of choice (to taste)
    • 2 tbsp coconut sugar (optional)
    • 1 egg white
    • 1/2 tbsp. pure vanilla extract
    • 6 tbsp. salted butter, room temperature

    Cream Cheese Frosting

    • 4 oz. cream cheese, room temperature
    • 1/4 cup heavy whipping cream
    • 3-4 servings Kal Stevia or 1/8 tsp. Organic Trader Joe's Stevia or sweetener of choice, to taste
    • 1/4 tsp. pure vanilla extract

     

Instructions
  1. “Sugar” Cookie Crust

    Preheat oven to at 350° F. In medium bowl, mix dry ingredients. Add wet ingredients to dry and blend well until dough forms. Taste for sweetness.

    Place dough onto parchment paper and make a circular disk. Top with another piece of parchment and roll out until you have around a 10" circle.  Be sure dough thickness is uniform to insure even baking.  If dough doesn't roll out into a perfect circle, simply use a pizza cutter to trim the edges.  You can also create a rectangular pizza crust as well.

    Transfer dough (with bottom parchment) to pizza sheet and bake for 20-24 minutes or until edges are slightly brown. Allow to cool completely before adding Cream Cheese Frosting.

    Cream Cheese Frosting

    In medium bowl, blend cream cheese until smooth. Add vanilla, Stevia and heavy whipping cream. Blend until thick and spreadable. Taste for sweetness and adjust if needed.

    NOTE: If you want lots of frosting, double recipe.

    Assembly

    Spread Cream Cheese Frosting over cooled Crust.  Arrange blueberries, strawberries, kiwi, bananas, blackberries or raspberries in any pattern you would like.  Enjoy!
