You know I love this stuff! I use it every day both in my food and on my skin. I have also be using it on my newborn… coconut oil is truly a miracle food!
Recently I stopped using almond milk and have been using coconut milk instead. Here is my post on How to Make your Own Coconut Milk! No metal cans and no added preservatives or emulsifiers! I also will show you how to use the leftover pulp (which is really shredded coconut) for yummy recipes. Making fresh coconut milk is EASY, DELICIOUS and 100 TIMES better than the stuff in the can!
From this day forward I will NEVER BUY COCONUT MILK again!! I am sick of paying $3-$4 a can for inferior coconut milk!!! Now I buy Tropical Traditions Coconut Chips and make my own! It’s so easy and so cheap and if I have time to make it with 2 under 2 in the house, anyone can!! The 2.2 lb bag of chips are on sale right now for $8.50! So I don’t run out, I will be stocking up AGAIN on coconut flakes to make lots of fresh coconut milk and Coconut Macaroons with the leftover pulp as well as a nut free “breading” for coconut shrimp! I also use the chips to make my new recipe, Frosted “Corn” Flakes Ceral which really taste like Frosted Flakes!!! Have you tried it yet!?

And of course, over half of the recipes in my cookbook are dairy-free. This is easily achieved by using coconut oil in the place of butter. Substituting butter for coconut oil is a great way to get more of this miracle food into your diet!
