So much has happened over the last 6 weeks that I have been too busy to blog about it, just surviving everyday. If I wasn’t so short of time this Sunday afternoon (typing this while both boys are sleeping) I would fill you in… stay tuned, it’s coming but just not today. 🙂
Hunter has about another week in the cast and he will be 4 this week… the joys and trials of parenthood! 🙂
We won’t be going anywhere tomorrow but we will definitely be grilling and eating this salad!
If you love my Ranch Dressing, and you love bacon and tomatoes, you are going to love this salad. Prepare it tonight and then add in the romaine lettuce just before serving. If you are bringing this to a family picnic, bring in over-sized Olive Wood Bowls so that you can add your chopped romaine lettuce (or even the bagged lettuce) and just shake the ranch and veggies with the lettuce, easy peasy and delicious! TIP: If you don’t want to take mayo to your family gathering, substitute more sour cream and add just a bit more Cajun Seasoning to make up for the missing salt.

Serves 6-8
- 6-8 thick slices of bacon, cooked and chopped
- Dressing:
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tbsp. apple cidar vinegar
- 1/2 tbsp. dill
- Veggies:
- 8 oz. cherry tomatoes, cut in half
- 1 bell pepper, chopped
- 8 oz. cucumber, seeded and chopped (1 small)
- 1 small head of romaine lettuce (or lettuce of choice), chopped
In a large lidded bowl and ingredients for dressing and mix well. Toss in chopped veggies (minus the lettuce) along with the bacon. Stir well and refrigerate until ready to eat.
Just before serving, add chopped lettuce to bowl and mix well, coating the lettuce leaves with the dressing.
Serve with Cheddar Croutons (I baked croutons in Microwave).
