One word…BACON!! LOL I know that sometimes food bloggers can go a little extreme when it comes to bacon but I personally think too much bacon is nearly impossible! Bacon is of course good with eggs, green beans, asparagus, beef, chicken, and pretty much any other veggy and meat. But did you know that it’s also delicious with banana (try adding a little crumbled bacon on top of my Banana Nut Bread or Banana Bread before baking…. delicious)! Bacon is great with chocolate (try dipping crispy and cooled bacon in 80% Dark Chocolate and allow to cool). And my latest perfect pairing… Bacon is meant to be with cooked Apples, YUM! I would SO eat this for dessert with a scoop of vanilla ice cream!
These make great party appetizers and I will probably be making them for my son’s first birthday next month… he does love bacon and apples (and so does mama)! Make these in advance and bake just before serving.

Finding nitrate free bacon is getting even easier. Even stores like Wal-Mart are now carrying it. It’s even crossed my mind to make bacon… it’s really easier than it sounds.. keep your eye out for a future blog post about it! 😀 I recently started making my own jerky. Once you realize how much healthier it is for you to prepare your own foods, the little bit of extra effort won’t bother you a bit!

How to Core an Apple in less than 5 seconds!
This is the easiest and safest way to core and cut up an apple. Use this method when cutting up your apple for this recipe. Depending on how big your apple is will depend on how many pieces you will then cut the 4 sides into.
Bacon-Apple Pie Bites
Makes 10 Apple Pie Bites (if using a large apple)
60 Calories, 3 grams Fat, 2.5 Net Carbs, 3 grams Protein per Apple Pie Bite
5 slices nitrate free bacon, cut in half
1 large apple (I used a Honey Crisp that weighted 8 oz.)
Cinnamon, optional
Directions
Cut the sides off of the apple, leaving the core in the middle (refer to image above). Then cut the apples into smaller wedges (for a large apple you should end up with 10 pieces). Wrap bacon around wedge of apple, covering as much apple as possible. Place seam side down on the rack of a counter top oven (or cooling rack inside of a cookie sheet if baking in the oven). Bake at 375 degrees F for 10 minutes in counter top oven then flip and cook an additional 5 minutes or until bacon is crisp.
NOTE: If baking in conventional oven, pre-heat to 400 degrees. Bake for 15 minutes then flip and cook for another 5-10 minutes or until bacon is crisp. Use broiler at the very end if the bacon is still not crisp.
Optional: Sprinkle a little cinnamon on apple before wrapping in bacon.
Allow to cool for 5 minutes before DEVOURING!
