The no recipe, recipe for My Tacoless Salad…15 minute meal

The quickest meal ever and I’m not monkeying around!

I got a little crazy with the decorating!
 



Sorry I skipped a day posting a recipe.  We are trying to finish up renovating a house we bought over a year ago.  Almost there!  The kitchen is grand, I am a happy woman!  Pictures to come.


Just because I didn’t have a lot of time to cook, or for that matter all of the right tools (the gas is still not hooked up to the stove at new house) doesn’t mean I couldn’t eat a sugar free and grain free meal!


This is very kid friendly and husband friendly too!  Make it fun! 


The No Recipe, Recipe for My Tacoless Salad


2 pound ground beef
6 tablespoons homemade Taco seasoning (see below for recipe.  If using store bought, find one without MSG)
Lettuce/spinach (if in rush, precut in the bag works great)
Cheese (again, if in a rush, pre-shredded is fine)
Sour Cream
Salsa
Avocado
Lime wedges
Olives
Jalapenos slices

  1. Brown meat in pan.  Add taco seasonings and 1/2 cup of water.
  2. Prepare lettuce, cheese and other toppings for salad.  Slice avacado and squeeze lime juice on it to help prevent browning (and it taste good).
  3. Assemble: Lettuce, lots of meat, cheese, sour cream, salsa and avacado on the side.

  • Homemade Taco Seasoning
  •  
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
 
Mix and store in airtight container.  Use 3 tablespoons per 1 pound of meat. 
 
 
Hubby’s Lunch for next day
 
You won’t miss the taco chips!  Very filling an this is an easy meal to take the next day to work.  Put your meat and cheese in one container and your salad fixings in another.  Simply heat meat and then pour over salad!

    Perfect! I took out a pack of ground beef to defrost and had no idea what to do with it. I just made this and the taco seasoning. Super easy and delicious!
