This recipe is actually a modification of one of my recipes from my first cookbook, Satisfying Eats. By using my Bacon-Balsamic BBQ sauce I cut out TONS of time because it already has the bacon in the sauce!

Serves 6
- 4-6 boneless and skinless chicken thighs (you could also use chicken breast)
- Cajun House Seasoning
- 1-1/2 tbsp. butter or bacon grease (or fat of choice)
- 1 cup Bacon-Balsamic BBQ Sauce
- 2 tbsp. water
- 4 oz. Monterey Jack cheese, shredded (or cheese of choice)
Lightly season both sides of the chicken with the Cajun House Seasoning and set a side. (Don't over do it on the seasoning or the final dish will be too salty.)
In a large skillet over medium high heat, add the butter or bacon grease, then add the seasoned chicken to the hot pan and cook for 4 minutes. Flip and cook for another 4 minutes. Top each piece of chicken with the bbq sauce. Add the remaining sauce to the pan along with the water. Cover immediately and cook for 6-10 minutes or until chicken is done and no longer pink in the center (or it reaches an internal temperature of 165 degrees F.) Once chicken is done, top with cheese and serve.
Optional: Serve with fresh diced tomatoes.
