Italian Chicken Salad

The perfect meal on a hot summer day! Revamp your boring chicken salad with a few secret ingredients that everyone will love. 

Let’s just face it, chicken breast is BORING! Yes, it contains lots of protein but it’s void of fat which makes the meat very dry, tasteless, unappealing and unsatisfying. Usually the only way I will eat chicken breast is if it is covered with loads of cheese or mayonnaise! lol I will eat the breast when I roast a chicken in the oven (like my Juicy Ranch Chicken), but it’s never my first choice. I usually end up make chicken salad out of the breast meat so that I can add some fat to my meal through the eggs and mayonnaise. When I cook a chicken in the slow cooker, I feel the only thing that can be done to the breast meat is to make a chicken salad so that’s where this recipe started. 

apple bacon chickenI LOVE my Bacon-Apple Chicken Salad (recipe found in Satisfying Eats) but I was looking for some variety. And with the Summer months approaching, I needed more ideas for meals that I can cook ahead and that won’t warm the house. This chicken salad is a winner all the way around! 

Warning… this recipe is ADDICTIVE! Eat it by itself, with a salad, or with fresh veggies from the garden (like tomatoes). Either way you are going to love it, guaranteed!

Ingredients
    • 8 oz. cooked or leftover chicken breast, chopped
    • 1/2 cup grated Parmesan cheese 
    • 2-1/2 tsp. Italian seasoning
    • 1/4 cup chopped sun-dried tomatoes 
    • 1/4 cup plus 2 tbsp. mayonnaise 
    • 1/4 cup sour cream (or more mayonnaise)
    • 1/2 cup marinated or canned artichokes, chopped or 2 tbsp. capers (optional)
    • 1/4 tsp. Himalayan salt*

    *Omit the salt if using mayonnaise instead of sour cream

Instructions
  1. Directions

    Add all ingredients to a bowl and blend. Taste for salt and adjust if needed.
    Serve with tomatoes, marinated artichokes or my Herbed Flatbread.
