I like a good low acid coffee. I drink just a little in the mornings (usually about 1/2 cup). Some days it gives me something to look forward to after getting up with the baby during the night.  It’s the small things in life when you have 2 little ones with no break for yourself.  Some people may have a glass of wine, well, I enjoy a little coffee and chocolate! 😉 But I confess, I am also a coffee snob. If it doesn’t taste just right, I just won’t drink it. I never get it at a restaurant and only drink it at my in-law’s if I make it. I prefer French Roast because I like it strong!  I usually drink it with a little heavy whipping cream (or the thick part of coconut milk) and a little stevia. Happy Girl! The problem I have is extra coffee that I don’t drink. I hate pouring it out. So I have started pouring it into ice-cube trays and making these yummy Frappuccinos!  I also keep some of the brewed coffee in the fridge to use when I am baking anything with chocolate. Coffee really enhances the flavors of chocolate so it is a win-win! This recipe is my version of Starbuck’s best-selling frosted coffee drink.  I have only had 1 of them in my lifetime and I was sick about 20 minutes later. They can contain as much as 50 grams of carbohydrates all from sugar! Yikes!  And they cost about $5 bucks and I refuse to pay that much for something to drink!  So save your $$$ and save your insulin, and give my Mocha Frappuccino a try!

Superfood Shake

This Frappuccino is yet another way that I get my superfoods in my “diet.”  I usually make a “World’s Healthiest Shake” to get my daily dose of gelatin and coconut oil in. I recently started add raw cacao powder to my shakes as well.  It is full of antioxidants and its CHOCOLATE!!!   Just another reason to drink this shake!

A few benefits of consuming gelatin from grass-fed animals:

  1. It’s a great way to add protein to your shakes.
  2. Helps utilize other protein and nutrients.
  3. Great for skin, nail and hair.
  4. Great for your bones.
  5. Great for your joint health and can decrease arthritis.
  6. Aids in digestion and can help heal digestive disorders.
  7. Can help you sleep.
  8. Great source of collagen.

I am working on a more detailed post about gelatin. I recommend Great Lakes Gelatin because of how it is processed and because it is made from grass-fed animals.

About the recipe

There are 2 versions. One using frozen coffee cubes and the other using Feliz Instant Coffee. Either one taste great!  I HIGHLY recommend a good blender.  I have a Ninja that works GREAT. The one I have has a small and large pitcher which I like. I also use my Magic Bullet when making smaller batches. I would LOVE a Vitamix but I can’t justify the cost YET! 😉 I need to sell more cookbooks for that! 😉  You just  really need something that is really going to crush the ice well and turn this drink into a smooth shake. Also use them to make homemade coconut or homemade almond milk. Any of these blender devices will be well used and are worth the investment!

Ingredients
    • 5-6 coffee ice cubes (preferably organic)
    • 2 tbsp cream (cow's or coconut)
    • 1/2 cup plus 2 tbsp dairy (cow's, coconut or almond)
    • 2 tbsp raw cacao powder or unsweetened cocoa powder
    • 1 tbsp Great Lakes gelatin (green can is preferable)
    • 1 tbsp virgin coconut oil (best value)
    • 4 servings Organic Trader Joe's Stevia or sweetener of choice (to taste)
    • 1 tsp. pure vanilla extract

    or

    • ¼ cup plus 2 tbsp cold strong coffee
    • ¼ cup cream (cow's or coconut)
    • ½ cup milk (dairy of choice)
    • 2 tbsp raw cacao powder or unsweetened cocoa powder
    • 1 tbsp gelatin
    • 1 tbsp coconut oil
    • 4 servings Organic Trader Joe's Stevia or sweetener of choice (to taste)
    • 10 ice cubes

    Optional Whipped Topping:

    • 1/4 cup heavy whipping cream
    • Sweetener to taste (optional)

    *Raw Cacao powder for garnish.

Instructions
  1. Add all ingredients to blender and blend until ice is crushed.

    For whipped topping: Add heavy whipping cream and sweetener to Magic Bullet (you can also use a hand mixer). Blend until stiff peak form.

    To pipe: Cut off corner of ziplock bag (or this reusable pastry bag) and place a star decorating tip in the corner. Fill with whipped cream and pipe on top of Frappuccino. Serve immediately.

  1. Nutrition: 275 Calories, 20 grams of fat, 10 Net Carbs, 10 grams of Protein**
