Apple Pie Muffins and my first YouTube Video on our farm

These muffins are absolutely delicious. All the smells and flavors of apple pie minus all the work and carbs! 🙂

I made these with my son’s kindergarten class this week and they were huge success. They are so simple and so good! 46 out of 48 of the kids love them and they were begging for more, LOL.

Apple Pie Muffins

Ingredients
  1. 1 medium apple, peeled and chopped

    2 tablespoons water

    ½ cup almond or cashew butter

    2 large eggs

    ½ tablespoon cinnamon

    1/8 teaspoon stevia (to taste)

    2-3 tablespoons honey

    ½ teaspoon baking soda

    ½ teaspoon vinegar

    Chopped nuts

     

Instructions
  1. Preheat oven to 350 degrees F. Line muffin pan with liners. Place chopped apples in a small saucepan with water. Cover and cook on medium for about 5 minutes or until tender. (You can also microwave apples with water for 1 minute, or until tender.)

    To a medium bowl add almond butter, eggs, cinnamon, honey, stevia, baking soda, and vinegar. Blend well then stir in cooked apples. Taste for sweetness and adjust if needed.

    Divide batter between 10 muffin cups (slightly less than ¼ cup measurement). Sprinkle muffins with nuts and bake for 15-17 minutes or until toothpick inserted in center comes out clean.
