I haven’t bought almond milk in over 2 months now. Really not a whole lot of nutrients in it and lots of other ingredients that I don’t want to consume! Trying to simplify my “diet” right now! I have really enjoyed making my own homemade coconut milk and using it to create these naturally flavored Coconut Milks!
One note when making your homemade coconut milk (which is so easy), the smaller batches you make, the more “milk” and cream you extract! When making my milk yesterday, the cream didn’t even harden on the top (after being refrigerated) because I blended it so long and in small batches! I need to do it a few more times and make sure I have that part figured out.
I hope you enjoy these 3 variations. Blueberry milk would be nice too. I should be picking blueberries this week off my mil’s TREES (the bushes are HUGE)! I can’t wait!
NOTE: If using canned coconut milk, be sure to use one that only contains coconut milk and water. I highly recommend making your own Coconut Milk. It is so easy and it taste SO much better! Also, dilute the canned milk 2 or 3:1 (coconut milk to water).
**For Frozen Shakes, add frozen berries or 5-6 ice cubes to blender.
Vanilla Coconut Milk
1 cup prepared and cooled coconut milk
2 servings Pure Kal Stevia (or sweetener of choice), to taste
1 tsp pure vanilla extract (use up to 1/4 tsp almond extract for “almond” milk)
1 tbsp Great Lakes Gelatin (optional but highly recommended)
1 tbsp Virgin Coconut Oil (optional but highly recommended)
2-3 ice cubes (to make cold)
*Add 3-4 more ice cubes for blended milk shake
Strawberry Coconut Milk
1 cup of prepared and cooled coconut milk
8-10 strawberries, halved (could also use cherries)
1 tsp pure vanilla extract
2 servings Pure Kal Stevia (or sweetener of choice), to taste
1 tbsp Great Lakes Gelatin (optional but highly recommended)
1 tbsp Virgin Coconut Oil (optional but highly recommended)
2-3 ice cubes (to make cold but omit if using frozen berries)
*Add 3-4 more ice cubes for blended milk shake (or use frozen berries)
Chocolate Coconut Milk
1 cup prepared and cooled coconut milk
1.5 tbsp cocoa powder
2 servings Pure Kal Stevia (or sweetener of choice), to taste
1/2 tsp pure vanilla extract
1 tbsp Great Lakes Gelatin (optional but highly recommended)
1 tbsp Virgin Coconut Oil (optional but highly recommended)
2-3 ice cubes (to make cold)
*Add 3-4 more ice cubes for blended milk shake
Directions
For all variations, blend in blender until smooth, 30-60 seconds. Taste for sweetness and adjust if necessary.
