I never thought people all over the United States and Canada, the UK, or as far away as Australia would be making my recipes and buying my cookbook and THAT my friends, is AWESOME! I have enjoyed your kind words, encouragement and compliments that my recipes have helped living grain-free a little easier (and tastier) for you! I was never trying to be an inspiration but if I have helped one person, it has been worth all the countless hours behind the computer and loading and unloading the dishwasher! 😉 The blog and the cookbook have been a blessing to me as well. About the recipe
It’s easy and delicious! Need to make it dairy free?? Feel free to use full fat coconut milk in place of the dairy and half and half. I have also used my Homemade Coconut Milk and it turned out well.
I HIGHLY recommend making a double batch of the Candied Pecans, they are delicious! You could also do this with almonds. If you don’t have time to make this, you can always order Wholesale Honey Roasted Pecans from a trusted supplier. If our pecan trees produce this fall, I will be making Candied Pecans to give as gifts!! (Add a touch of cinnamon and nutmeg and you have just re-created the expensive and mouth-watering nuts that I used to LOVE at the Mall!)
Pecan Pie Ice Cream
Taken from Satisfying Eats Cookbook
Serves 6
250 Calories, 24 g of Fat, 6 g Net Carbs, 3.5 g Protein per serving
1 cup heavy whipping cream (without Carrageenan)
2 cups half and half
1/2 tbsp pure vanilla extract
1/8 to 1/4 tsp KAL® Pure Stevia or sweetener of choice (to taste)
Directions
In large bowl, whisk all ingredients well. Taste for sweetness and adjust if needed. Pour mixture into ice cream machine and follow directions for ice cream maker. While ice cream is churning, prepare Candied Pecans.
During the last 5 minutes, add most of the candied pecans (see recipe below) to the ice cream, reserving some for a garnish.
“Candied” Pecans
1/2 tbsp salted butter
1/2 cup pecan halves
1/2 tsp molasses (or raw honey)
2 servings KAL® Pure Stevia (to taste) or sweetener of choice**
**Coconut sugar or honey work well.
Directions
In a small frying pan over med-low heat, add butter and pecans. Toast nuts about 3-5 minutes, stirring often. Turn heat down to low and add molasses. Stir well to coat all pecans. Add Stevia and stir well until evenly coated. Taste for sweetness and add more sweetener if desired. Allow to cool completely on parchment paper.
