Pecan Pie Ice Cream and Ice Cream Maker Giveaway

123 ice creamThis is so exciting!  I can’t believe how fast Satisfying Eats is growing and how far it is spreading across the Globe!! I never thought people all over the United States and Canada, the UK, or as far away as Australia would be making my recipes and buying my cookbook and THAT my friends, is AWESOME!  I have enjoyed your kind words, encouragement and compliments that my recipes have helped living grain-free a little easier (and tastier) for you!  I was never trying to be an inspiration but if I have helped one person, it has been worth all the countless hours behind the computer and loading and unloading the dishwasher! 😉 The blog and the cookbook have been a blessing to me as well. It has given me a venue to Feed others by sharing my culinary creations. After all, I am just a Good ‘ole Southern Girl who LOVES to cook and make people happy with her Food!

I was trying to think of something AWESOME to giveaway once my Facebook Page reaches 5K (which at the rate it is growing, should take less than a month)!  The first thing that popped into my mind was an Ice Cream Maker, not just any ‘ole maker but a Fancy one, one that doesn’t require you to freeze a bowl and one that doesn’t require ice and salt! Ice Cream makes people happy, and I want to surround myself with HAPPY PEOPLE!

I have been coveting an ice cream maker with compressor for a long time (It was on my Amazon Wish List for over a year). Then FINALLY a few months ago, I bit the bullet and bought it and EVERYONE that comes over is so glad I did! Creamy ice cream in 30 minutes! I am loving it and I only wish I had bought it months ago! (Just in case you are wondering, we don’t eat ice cream every night although my husband and son would never turn it down.)

What makes this ice cream maker different is that there is a compressor that brings your ice cream maker to the correct temperature and it stays there. It does not rely on a bowl, that you have to freeze (which usually thaws too QUICKLY), and you do not need any ice or rock salt.  I am officially spoiled!  This ice cream maker came in handy when I wanted to make 3 different ice creams for my son’s birthday party.  I first made vanilla, then strawberry, then chocolate, all back to back without even washing out the bowl!

About the recipe

It’s easy and delicious!  Need to make it dairy free??  Feel free to use full fat coconut milk in place of the dairy and half and half. I have also used my Homemade Coconut Milk and it turned out well.

I HIGHLY recommend making a double batch of the Candied Pecans, they are delicious!  You could also do this with almonds.  If our pecan trees produce this fall, I will be making Candied Pecans to give as gifts!! (Add a touch of cinnamon and nutmeg and you have just re-created the expensive and mouth-watering nuts that I used to LOVE at the Mall!)

Pecan Pie Ice Cream

Taken from Satisfying Eats Cookbook

Serves 6

250 Calories, 24 g of Fat, 6 g Net Carbs, 3.5 g Protein per serving

 1 cup heavy whipping cream (without Carrageenan)

2 cups half and half

1/2 tbsp pure vanilla extract

1/8 to 1/4 tsp KAL® Pure Stevia or sweetener of choice (to taste)

Directions

In large bowl, whisk all ingredients well. Taste for sweetness and adjust if needed. Pour mixture into ice cream machine and follow directions for ice cream maker.  While ice cream is churning, prepare Candied Pecans.

During the last 5 minutes, add most of the candied pecans (see recipe below) to the ice cream, reserving some for a garnish.

“Candied” Pecans

1/2 tbsp salted butter

1/2 cup pecan halves

1/2 tsp molasses (or raw honey)

2 servings KAL® Pure Stevia (to taste) or sweetener of choice**

**Coconut sugar or honey work well.

Directions

In a small frying pan over med-low heat, add butter and pecans. Toast nuts about 3-5 minutes, stirring often. Turn heat down to low and add molasses. Stir well to coat all pecans. Add Stevia and stir well until evenly coated. Taste for sweetness and add more sweetener if desired. Allow to cool completely on parchment paper.

    Oh! I wish I had seen this giveaway earlier! Guess I know what I’ll be getting hubby for his birthday! 😉 I plan to make your pecan pie ice cream for Thanksgiving with your apple crumble (from your cookbook)! I’m able to find the grass fed whipping cream without the carrageenan in it, but not the half-and-half. Do you think I could use the cream but substitute the half-and-half with full fat coconut milk? Also, I have the Trader Joes organic stevia…should I use 1/4 – 1/2 tsp?

      Yes, that should be a perfect swap with the coconut milk for the half and half. Use twice the amount of Trader Joe’s Organic Stevia than KAL stevia in any recipe, at least that is a good starting point but be sure to sweeten to your taste. I hope you have a wonderful Thanksgiving and that everyone enjoys your desserts! :)
