This is so exciting! I can’t believe how fast Satisfying Eats is growing and how far it is spreading across the Globe!! I never thought people all over the United States and Canada, the UK, or as far away as Australia would be making my recipes and buying my cookbook and THAT my friends, is AWESOME! I have enjoyed your kind words, encouragement and compliments that my recipes have helped living grain-free a little easier (and tastier) for you! I was never trying to be an inspiration but if I have helped one person, it has been worth all the countless hours behind the computer and loading and unloading the dishwasher! 😉 The blog and the cookbook have been a blessing to me as well. It has given me a venue to Feed others by sharing my culinary creations. After all, I am just a Good ‘ole Southern Girl who LOVES to cook and make people happy with her Food!
I was trying to think of something AWESOME to giveaway once my Facebook Page reaches 5K (which at the rate it is growing, should take less than a month)! The first thing that popped into my mind was an Ice Cream Maker, not just any ‘ole maker but a Fancy one, one that doesn’t require you to freeze a bowl and one that doesn’t require ice and salt! Ice Cream makes people happy, and I want to surround myself with HAPPY PEOPLE!
I have been coveting an ice cream maker with compressor for a long time (It was on my Amazon Wish List for over a year). Then FINALLY a few months ago, I bit the bullet and bought it and EVERYONE that comes over is so glad I did! Creamy ice cream in 30 minutes! I am loving it and I only wish I had bought it months ago! (Just in case you are wondering, we don’t eat ice cream every night although my husband and son would never turn it down.)
What makes this ice cream maker different is that there is a compressor that brings your ice cream maker to the correct temperature and it stays there. It does not rely on a bowl, that you have to freeze (which usually thaws too QUICKLY), and you do not need any ice or rock salt. I am officially spoiled! This ice cream maker came in handy when I wanted to make 3 different ice creams for my son’s birthday party. I first made vanilla, then strawberry, then chocolate, all back to back without even washing out the bowl!
If you don’t Win this Awesome Ice Cream Maker and want to invest in a great affordable one, check out THIS one from Cuisinart (it costs about $50).
Isn’t she a beauty!?!?! This awesome ice cream machine contains 2 paddles, one for making ice cream and one for making gelato. What’s the difference between the two you ask? Ice cream has more air incorporated into it while gelato is a typically a denser product. Check out all of the awesome features of the Cuisinart ICE-100 Compressor Ice Cream and Gelato Maker. Watch the video but be sure not to drool on your lap top! 😉 Can’t you just taste the ice cream! Right now this awesome ice cream and gelato maker is on sale for Half Off!! I couldn’t resist…. Time for a Giveaway!!
Don’t worry if you have cut dairy out of your diet, you can use this ice cream maker to make dairy-free ice cream as well! My favorite is my Triple Chocolate Ice Cream! I also have other ice cream combinations in the cookbook.

Now here is a recipe that I have made in my ice cream maker that you are going to love! Pecan Pie Ice Cream anyone???
About the recipe
It’s easy and delicious! Need to make it dairy free?? Feel free to use full fat coconut milk in place of the dairy and half and half. I have also used my Homemade Coconut Milk and it turned out well.
I HIGHLY recommend making a double batch of the Candied Pecans, they are delicious! You could also do this with almonds. If our pecan trees produce this fall, I will be making Candied Pecans to give as gifts!! (Add a touch of cinnamon and nutmeg and you have just re-created the expensive and mouth-watering nuts that I used to LOVE at the Mall!)
Pecan Pie Ice Cream

In large bowl, whisk all ingredients well. Taste for sweetness and adjust if needed. Pour mixture into ice cream machine and follow directions for ice cream maker. While ice cream is churning, prepare Candied Pecans.
During the last 5 minutes, add most of the candied pecans (see recipe below) to the ice cream, reserving some for a garnish.

**Coconut sugar or honey work well.
In a small frying pan over med-low heat, add butter and pecans. Toast nuts about 3-5 minutes, stirring often. Turn heat down to low and add molasses. Stir well to coat all pecans.
