Chocolate Ganache

Ganache just sounds so fancy but this recipe is really easy.  Ganache can be used as a quick frosting poured on a cake, can cover your favorite food or made truffles so it is something worth  learning how to make.  
Be sure to keep your double boiler on low.  Once you see chocolate start to melt, turn off heat under double boiler and continue to blend chocolate mixture until smooth.  Remove from heat.  If you keep on heat too long, it will separate and you will have a mess! 

Chocolate Ganache

1 & 1/2 cup Homemade Chocolate Chunks (or 6-8 oz of favorite dark chocolate bar)
1 cup Heavy Cream (Carrageenan Free)
1 tsp pure vanilla extract
  1. Warm heavy cream on top of double boiler.  
  2. Add chocolate chunks.  
  3. Stir until melted.  
  4. Remove from double boiler.  While warm, pour over cupcakes.  

Note: There will be extra Ganache.

    Hi Melissa,I'm trying this recipe now. The instructions don't say when to add the vanilla: with the cream, or with the chunks, or does it matter? I put it in at the same time as the chunks… It's delicious!

    Can you use coconut milk instead of the heavy cream? Enjoying your website since I found out I have blood sugar issues which means no sugar (even the healthier sugars) or honey (used all the time for grain free recipes). Do you have any good resources of websites you like that bake and cook without sugar or grains and do you know what portion of stevia you substitute when a recipe calls for honey or sugar? Thanks!
